This class extends basic knowledge of the science and process of cheese making and explores varieties of pressed cheese. Fundamentals of making pressed/aged cheeses are discussed along with controlling curd/whey temperature and ripening time to create final cheese texture and flavor. Various methods of preserving are discussed along with the caring and aging of your cheese during affinage.  

 

The class chooses making 1 of the following: Colby, Gruyere, Jarlsburg, Asiago, Havarti or Gouda. Instructions and cultures to make your own cheeses at home are included.

This course is designed for those interested in a one day cheese making workshop that will encompass a variety of soft, pressed and advanced cheese making techniques including: sour cream, cream cheese, butter, boursin, ricotta, mozzarella, Fromage Blanc, feta, farmer's style cheddar and brie . Students will take home ingredients and instructions. 

 

Course runs approximately 6 hours. 10-4pm

Learn how to make a variety of soft cheeses that have so many culinary uses: Mozzarella pinwheel, butter, Fromage Blanc, sour cream, cream cheese and Boursin. We will be foraging wild and dried herbs and botanicals infusing the curd and creating delicious flavors for you to enjoy at home with family and friends. Unique and creative ways to utilize the curd in dips, spreads as well as other culinary applications are discussed. A fun and popular course!

Gabriola classes are hands on: you will be working with and taking home your own chévre infused with herbs, spices and wild crafted botanicals as well as making home crafted, hand stretched mozzarella cheese. In addition, you will learn how to make burrata, bocconci and a pinwheel using the mozzarella made in class. Unique and creative serving ideas are shown.

Cultures and ingredients to make 4 lbs of mozzarella and 1 lb of Chévre at home are included.

This course introduces you to the art of making your own fresh cheeses starting with an understanding of the ingredients used to make a variety of cheeses.

Class outcomes:

 

Students will learn about the various types of cheeses and how to craft them at home. Classes include fresh soft cheeses (Fromage Blanc/chevre), soft mold ripened cheeses (camembert/brie), blue cheese, Feta and ricotta, pressed cooked cheeses, cheddar and the milling process, mozzarella using a rapid acidification process as well as a culture/lipase process.

 

Students will have a comprehensive understanding of the process of cheese making and how to control the process so they can attain the results needed in a particular cheese.  Ingredients and instructions are included to replicate the class at home.

 

Fundamentals of hand crafting your own cheese:

 

* history of cheese making both traditional methods and standardized methods

*Types of cheese: fresh, soft ripened, mold ripened, washed curd, natural rind/washed rind hard cheeses, blues

*types of milk: homogenization, pasteurization, heat treatment

*lactic bacterial starter cultures and their role: mesophilic/thermophilic

*other bacterial cultures, molds and yeasts and their role 

*traditional cheese making styles

*types of rennet, Floccuation and coagulation/calcium chloride

*controlling curd/whey temperature and ripening time to create final cheese texture and flavor

*PH/Acidity levels

*Affinage: caring and aging your cheese

*waxing, oil rubs, bandaging cheese

*washing and brines, using spices and flavorings

 

 Gabriola classes start at 10.30 and run to 2.30 and include kit and instructions to make your own at home unless otherwise stated.

 

48 hour pre-registration is required, payment due upon registration, class credit applied for missed classes, no refunds.
