PAULA'S STORY

I have been living on Gabriola island for over 20 years and try to be as sustainable as possible. When I  had the opportunity to help milk a friend's cow named Helga, I jumped at the chance. Perhaps I was longing for a connection to my native state of Wisconsin or I was channeling my inner Cheddar head.. regardless of the reason, I have spent the past 5 years milking Helga and crafting my own delicious cheeses. In my classes, I show you that you don't need to own a cow, goat, sheep or water buffalo to make your own cheeses, you can make delicious cheese from store bought milk.

Using my extensive background in event planning and private catering, I designed a series of classes and started teaching the ancient art of crafting home made cheeses over 4 years ago .  I use products readily available and demystify the idea that cheese making is difficult. My classes are comprehensive, delicious and a lot of fun!  You will leave with a good understanding of the history, science and alchemy of this ancient art of fermentation as well as the  ingredients used in making artisan cheeses. Bring a good appetite and be prepared to create some amazing and delicious creations worthy of the cover of Bon Appetit Magazine!

VISITING MADD ACRES

If you are taking a cheese class on Gabriola, you will be coming to our hobby farm/forest fondly named Madd Acres- part our last name, and part we are a little "Madd" for all that is going on here on our 80 acres!  What you can expect is a bustling little hobby farm with bees buzzing, flowers blooming and lots of happy quacks, grunts, cheeps and squawks from all the various animals.  Gus, our dog along with Bodhi, the cat will greet you on arrival. You may even get a chorus of quacks from the ducks.  You never know what you'll find at Madd Acres!
